Inside pork slaughter plants, the correct aerial movement of carcasses, viscera and offal is a key factor not only for the respect of the production rhythms, but also for the healthiness of the working areas. European health regulations do not allow any contact between the carcass of the pig slaughter line with the slaughter by-products eliminated during the hog slaughter process and operations.
At the same time, a total traceability of each part of the animal is requested: this because, if some pathologies are discovered, each component must be putted in quarantine and subsequently sent to destruction. DEST ITALIA designs and manufactures bi-planar motorized overhead chains, capable to perform routes not only straight but also bends, uphill and downhill.
Every pig processing line with a production of more than 30 animals per hour, need to set up motorized overhead chain solutions.
The fast cooling chains by DEST ITALIA allow to subject the pig carcass, for the desired time, to forced ventilation with low temperature; this “shock” completely blocks the sweating of the meat after slaughter and therefore avoids a weight loss of about 3%.
Once the external temperature of 4° is reached, the carcass is conveyed to the meat cold storage rooms.
